Mini rainbow cheesecake with crispy dark chocolate heart

Hey hey!! I didn't forget about Pride Month but everything is rainbow related around here all year long!! However this super easy mini cheesecake is definitely the most rainbowy (???) treat I made lately so if you want to celebrate this month properly you should make it too. Check out the recipe below! INGREDIENTS: --- CRISPY CHOCOLATE CRUST --- 30g dark chocolate 10-15g Rice Krispies --- RAINBOW CHEESECAKE FILLING --- 200g cream cheese (at room temperature) 75g greek yogurt (I used coconut greek yogurt) * 2 Tablespoon sugar * gel food colouring (violet, blue, green, yellow, orange, red) --- CRISPY CHOCOLATE HEART --- dark chocolate splash of milk Rice Krispies DIRECTIONS: Cover with parchment paper the bottom of a tiny (10cm) springform pan. Melt dark chocolate in the microwave or on a double boiler. In a bowl mix dark chocolate with Rice Krispies until incorporating and pour the mixture into the bottom of the prepared pan; put in the refrigerator to set for at least 30 minutes. Meanwhile prepare the rainbow filling: cream together the cream cheese and the sugar until combined. Add greek yogurt and keep mixing until everything is well amalgamated. Divide the cream into 6 bowls (about 50g of cream each) and colour them with a small amount of food colouring. Remove the pan from the fridge and pour the violet mixture on top of the chilled crust. Distribute evenly with the back of a spoon and put in the freezer for about 30 minutes (or until the cream is set. Repeat this process to create the complete rainbow: blue, green, yellow, orange and red. Then put back in the freezer overnight. The day after melt a small quantity of dark chocolate in the microwave or on a double boiler, add a splash of milk and mix until creamy. Leave it aside to chill a bit. Remove the cheesecake from the freezer and garnish the surface pouring the chocolate cream inside a heart-shaped cookie cutter. Sprinkle with Rice Krispies and put in the fridge to set for about 30 minutes. Remove from the pan and serve. Enjoy :) RECIPE NOTES: You can use heavy cream instead of greek yogurt. You might need more or less sugar for the filling.. I suggest tasting the cream to check if it's sweet enough.. it depends a lot on what kind of yogurt and cream cheese you are using. Also, food colouring doesn't have any particular taste so if you are using plain yogurt you may want to add a splash of vanilla extract or other flavouring.
