Coco Pops banana muffins

August is here and everybody is on vacation.
But don't worry Cereallyserena is never on vacation 😂
Even if I manage to go somewhere (which this year it might not even happen) and stop baking for a while I would have recipe ideas ready to share for at least 2 months 😅😅
So here another one: Coco Pops banana muffins! They are easy, super chocolate-y and honestly, even kinda healthy!

INGREDIENTS: 50g whole wheat flour 50g Kellogg's Coco Pops 1/2 Tablespoon cocoa powder 113g milk 1 Tablespoon vegetable oil 1 egg white 1 teaspoon baking powder 25g brown or granulated sugar 1/2 banana* 1/4 teaspoon salt DIRECTIONS: Preheat oven to 400°F (200°C) and prepare your muffin tin with 6 paper cups. In a small bowl add whole wheat flour, baking powder, salt, cocoa powder and sugar. Mix with a spoon or rubber spatula and leave it aside. In another bowl add Kellogg's Coco Pops, milk, oil, egg white and thin slices of banana. Stir to combine. Finally fold in the dry ingredients and mix briefly with the spoon. Let it rest for 5 minutes. Transfer the batter into the prepared muffin tin. Bake for about 20 minutes or until a toothpick inserted into the center of the muffins comes out clean. Let them cool completely before serving. Enjoy :) RECIPE NOTES: If you like bananas I would suggest adding here the whole fruit instead of half. I suggest using silicone cups instead of paper here since the muffin batter is low fat and it might stick a bit on the paper. I adapted this recipe from here.
