Women's day muffins

Happy International Women's Day!!
Today I want to share some treats that are inspired by the classic Italian Mimosa Cake, a delicious sponge layer cake traditionally made on this special day.
If you don't know what I'm talking about here the one that I've made last year:
These Women's Day muffins are super fluffy strawberry muffins (I used Chiarapassion recipe here) topped with pastry cream and crushed Corn Flakes.
I love how they turn out but I wasn't able to taste them ðŸ˜ðŸ˜
My trusted testers told me they were delicious though so you should definitely give it a try.

INGREDIENTS:
1 egg
200g all purpose flour
120g granulated sugar
8g baking powder
80g milk
80g plain yogurt
50g vegetable oil
200g strawberries
lemon zest
vanilla powder*
pinch of salt

--- TOPPINGS ---
1 egg yolk
125g milk
10g cornstarch
25g sugar
lemon zest

DIRECTIONS:
Preheat oven to 400°F (200°C) and prepare your muffin tin with 10-11 paper cups.
Wash and rinse your strawberries and cut them in small pieces.
In a large bowl, mix together all purpose flour, sugar, baking powder, vanilla powder and salt. Set aside.
In a smaller bowl whisk together with a fork the liquid ingredients: oil, egg, milk, yogurt and lemon zest.
Add the liquid ingredients into the dry ones and mix briefly with a wooden spoon.
Finally stir in the strawberry pieces and mix to combine.
Transfer this mixture into the prepared muffin cups and bake for about 20-25 minutes or until a toothpick inserted into the center of the muffins comes out clean.
Let them cool completely before removing from the cups.
Make the pastry cream: in a microwave safe bowl whisk together all the ingredients (egg yolk, cornstarch, milk, lemon zest and sugar) making sure that there are no lumps. Microwave at the highest power for 30 seconds then mix with a spoon and microwave again for 30 seconds. Now the cream should be ready and thick enough to be spread on top of your muffins.*
Garnish the surface of the muffins with pastry cream, crushed Corn Flakes and and half strawberry.

RECIPE NOTES:
You can use vanilla extract instead of vanilla powder and put it together with the liquid ingredients instead of the dry ones.
I made a microwave version of the pastry cream but you can go whatever pastry cream you are used to do. If you are using this recipe be aware that every microwave is different and those timings can vary.
Store the muffins in the fridge if not eaten right away.
