Very berry yogurt brownies (vegan)

Do you remember the VERY BERRY LEMON BLONDIES that I've shared a few weeks ago?Well I've decided to make a brownie version too so here my VERY BERRY YOGURT BROWNIES!! 🍫😍
These treats are once again filled with fresh strawberries and blueberries and they are topped with super cool cereal berries (CAP’N CRUNCH’S Cotton Candy Crunch)!
Plus, they are vegan, low fat and super chewy!!
I'm not a chocolate fan so I'm not gonna lie, I still prefer the blondie version but if you are a chocoholic I bet you would love these brownies!
The recipe is again super super easy and you can read it in the section below this picture 💁♀️

INGREDIENTS:
120g all-purpose flour
42g cocoa powder
150g cup brown sugar
1/4 teaspoon baking powder
125g vegan yogurt (I used unsweetened coconut yogurt)
114g plant-based milk (I used almond-rice milk)
1 Tablespoon coconut oil (12g)
pinch of salt
75g fresh blueberries
75g fresh strawberries

DIRECTIONS:
Preheat oven to 350°F (180°C) and cover a 18x18cm (7x7-inch) square pan with parchment paper.
Wash and rinse the berries well, then cut off the strawberry tops and dice them into small pieces. Put them in a bowl together with the blueberries. Set aside.
In a large mixing bowl mix the all-purpose flour, cocoa powder, brown sugar, salt and baking powder (sift them if they are too lumpy!).
Add the yogurt, plant-based milk, and coconut oil and whisk until combined.
Finally fold in the berries and mix with a spatula (see picture below).
Transfer the mixture into the prepared baking dish, level out with a spatula or the back of a spoon and top the surface with CAP’N CRUNCH’S Cotton Candy Crunch.
Bake for about 30-35 minutes or until the chocolate surface is firm to the touch (cover it with parchment paper if the cereal starts to brown too much).
Remove from the oven and let it cool completely in the pan.
Lift the brownies out using the parchment paper and slice into 9 squares.

For this recipe I think you can also use "cereal berries" from CAP’N CRUNCH’S Crunch Berries or CAP’N CRUNCH’S Oops! All Berries.

Store them in an airtight container in the fridge. You can also freeze them.
