Vegan Zucchini Oat Bread

My friend Ida recently started a food blogger career.

Every Friday she shares amazing vegan recipes on her youtube channel, she is very passionate and I think you should definitely subscribe and check out all the videos!!

The first recipe that she shared was vegan zucchini bread. Have you ever tried it?

To me it was a new thing and I was very intrigued by it so I tried and here I'm gonna share with you the translation of her recipe and some adjustments that I made (delicious adjustments but also totally unnecessary ahah)



INGREDIENTS:

  • 200g zucchini

  • 200g all purpose flour

  • 50g oat flour*

  • 100g brown sugar*

  • 10g baking powder

  • 150g rice milk

  • 50g vegetable oil

  • 100g water

--- TOPPINGS ---

  • Rolled Oats

  • Walnuts


DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and cover a loaf tin with parchment paper (my tin is 22 cm x 8 cm).

  2. Wash one big zucchini, cut the ends and finely grate it using a grater. Then remove the excess water.

  3. In a bowl add zucchini, rice milk, oil and water and mix with a spoon.

  4. Add brown sugar, flour, oats and baking powder and stir until well combined.

  5. Pour the batter in the prepared loaf tin and garnish the surface with rolled oats and walnuts.

  6. Bake for about 60 minutes or until a toothpick inserted in the center of the loaf comes out clean.

  7. Let it cool completely before removing from the pan.

  8. Enjoy :)



RECIPE NOTES:

  • I added oat flour but in the original recipe she used 250g all purpose flour.

  • You can also use white sugar.

  • You can also add chocolate chips or almonds.
