Vegan Sheet Pan Pancakes with fruit & cereal
I haven't posted anything in a while but hey, I'm still alive! 😄
I keep baking and having fun with cereal in my spare time but I hate taking pictures of my experiments (since I'm also very bad at that job) so I've decided to take a long break from cereallyserena and see what happens 🤷♀️
In any case I still have lots of recipes that I've made a long time ago and needs to be shared so here a weekend classic: Pancakes!
These are vegan sheet pan pancakes topped with cereal and fruit, easy and quick to make and super fun!!
I got this recipe from Sam and I think you should give it a try too because they are super fluffy and oh so delicious 😋

INGREDIENTS:
--- VEGAN SHEET PAN PANCAKES ---
140g all purpose flour
1+ 1/2 Tablespoons granulated sugar
7g baking powder
1/4 teaspoon salt
125ml plant-based milk (I've used rice milk)
2 teaspoons lemon juice
42g vegan butter (melted)
1/2 teaspoon vanilla extract
--- TOPPINGS ---
Fruit (I've used banana and berries)
Cereal (I've used Trix Trolls Cereal)

DIRECTIONS:
Preheat oven to 400°F (200°C). Line a 31x20cm rectangular pan with parchment paper.
Add the flour, sugar, baking powder, and salt to a large bowl and whisk well.
Now add the plant-based milk, lemon juice, melted vegan better, and vanilla extract and gently combine. The batter will be lumpy and full of big bubbles.
Pour the batter in the prepared pan and gently spread it with a spatula.
Top the surface with fruit (sliced bananas and berries) and cereal (Trix Trolls Cereal).
Bake for about 10 minutes or until the edges of the pancake are lightly browned.
Slice and serve warm.

RECIPE NOTES:
Leftovers can be stored in an air-tight container in the fridge for 2 - 3 days and can be reheated in the microwave for 30 seconds.
I've adapted the recipe from Sam (It doesn't taste like chicken).
