Vanilla ice cream pie with Rice Chex Crust

How do you feel about having ice cream for breakfast? 🤔🍦🍦🍦

I was very skeptical but then I made this Vanilla ice cream pie with RICE CHEX crust and it became my breakfast for several days 😅😂

My final thought: 100% worth it.

Plus this is a gluten free, vegan friendly pie that you can customise in a billion way.

I'm showing you the very basic idea but you can use any ice cream you like, any cereal you have in your pantry, whatever topping you love ❤️

--- FILLING ---

  • 350g vanilla ice cream**

--- TOPPING ---

  • crumbled RICE CHEX

  • caramel, chocolate, fruit...


  1. Preheat oven to 300°F (150°C).

  2. Crumble RICE CHEX cereal with a food processor and put them in a bowl.

  3. Melt the butter in the microwave or on the stove and mix it with the cereal powder until you get the consistency of wet sand.

  4. Press this mixture into the bottom and the sides of a 18cm pie/tart dish and bake for 10 minutes.

  5. Remove from oven. Let ice cream start to soften.

  6. Once crust is cool, scoop ice cream into the crust.

  7. Level out with a spatula and freeze overnight, or until firm.

  8. Right before serving top with crumbled RICE CHEX and any other topping you like (caramel sauce, melted chocolate, fruit...).

  9. Enjoy :)


  • * You can use 20g RICE CHEX instead of almond flour but I think almonds make the crust way more tasty.

  • ** You can use any ice cream you want here. I used lactose free since I'm lactose intolerant.

  • This recipe is gluten free and totally vegan friendly: you can use vegan butter or coconut oil instead of butter and vegan ice cream for the filling.

  • Store the pie in the freezer and top with caramel, chocolate, fruit at the moment of serving.
