Apple oatmeal cake

Do you want to learn how to bake a super healthy and flourless breakfast cake made entirely with oat flour? Check out the recipe of this small apple oatmeal cake below!



INGREDIENTS:

  • 130g oat flour *

  • 50g vegetable oil*

  • 2 eggs

  • 100g granulated sugar

  • 2 Tbsp lemon juice

  • 5g baking powder

  • 1 small apple

  • 30g raisins or chopped walnuts*

  • lemon zest

  • Rolled oats



DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and cover a 18cm spring form tin with parchment paper.

  2. Put the raisins to soak in a small bowl of water or alternatively chop the walnuts in small pieces and leave them aside.

  3. In a small bowl whisk together the dry ingredients (oat flour and baking powder) until combined.

  4. In a bigger bowl beat eggs and sugar together with an electric mixer until light and foamy. Pour the oil, lemon juice, lemon zest and keep beating.

  5. Leave the mixer, add the flour mixture and stir with a rubber spatula.

  6. Cut the apple and finely chop one half of it while reserving the other piece for decoration. Add the apple and the raisins (after draining them!) or the chopped walnuts and stir again very quickly. Do not over-mix the batter.

  7. Pour the batter into the prepared tin and garnish the surface with sliced apples and rolled oats. You can also add some walnuts if you like them :D

  8. Bake the cake for about 45 minutes.

  9. Let it cool completely before removing from the pan.

  10. Enjoy!



RECIPE NOTES:

  • If you don't have oat flour you can make your own pouring rolled oats in a food processor and pulsing a few times.

  • You can use 60g melted butter instead of vegetable oil.

  • If you choose to use raisins remember to put them in a bowl of water at least 15 minutes before making the cake so that they have time to soften a bit.
