Summer fruits granola tarts

What's your favourite summer fruits?

I think mine is peach but I love almost all of them so I tried to include some in these super easy granola tarts! The recipe is inspired by these vegan raspberry granola tarts by Nolwenn! If you are vegan go check out her website because I think her ideas are all easy and delicious.

Anyway I scaled down her recipe to make only 2 small (8cm) granola tarts and I used almond butter instead of peanut butter because I wanted a more delicate flavour.

These tarts are perfect for a fresh and healthy summertime breakfast so if you have some fruits and yogurt in your fridge and if you manage to turn on the oven for only 10 minutes, I think you should definitely make them!!



INGREDIENTS:


--- VEGAN GRANOLA CRUST ---

  • 65g oat flour

  • 25g almond butter*

  • 25g maple syrup*

--- FILLING ---

  • 100g greek yogurt

  • fruits of choice (I used peaches, raspberries and blueberries)




DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and grease with oil two small (8cm) tart dishes.

  2. In a bowl combine oat flour, almond butter and maple syrup. Mix with a spatula or a wooden spoon until you get a thick dough.

  3. Press the crust into the bottom of the tart dishes and place them in the oven.

  4. Bake for 10 minutes or until it begins to darken.

  5. Set aside to cool completely before filling with greek yogurt and your favorite summer fruits.

  6. Enjoy :)



RECIPE NOTES:

  • You can use peanut butter instead of almond butter.

  • You can use agave syrup instead of maple syrup.

  • You can fill these tarts whatever you want.
