Strawberry baked donuts with Fruity Lucky Charms

It's Mother's day week and this super pink recipe is for my two favorite mothers-to-be: my sister and my friend Parima. They are going to be awesome moms! 💞💞
So here what I made: strawberry baked donuts with Fruity Lucky Charms 🤩
The color pink in the donuts is totally natural since is made with strawberry, while the crunchy pink on the surface is made with crumbled breakfast cereal.
They are soft colourful and super delicious: give it a try!

INGREDIENTS:
125g all purpose flour
66g granulated sugar
1 teaspoon baking powder
1 egg
14g melted butter
75g milk
75g strawberry syrup*
1/4 teaspoon vanilla extract
1/4 teaspoon salt

--- TOPPING ---
80-100g white chocolate
DIRECTIONS:
Preheat oven to 350°F (180°C).
Grease your donut pan with oil, butter or cooking spray and cover lightly with flour.
In a bowl add the dry ingredients (all purpose flour, granulated sugar, baking powder and salt) and mix well with a hand whisk to remove any lumps.
Make a well in the center and add liquid ingredients: egg, milk, vanilla extract and melted butter. Mix with a spatula until combined.
Stir in the strawberry syrup and mix until creamy: the batter should be wet but not runny (see picture below).
Pour the batter into the pan with a teaspoon filling up to 3/4 otherwise the donut holes are going to close during the baking process.
Bake for about 10 minutes until donuts spring back when touched on the surface.
Let them cool in the pan for about 10 minutes then transfer to a cooling rack.
Melt white chocolate in the microwave or on a double boiler ( I suggest the second option since white chocolate is a bit tricky to melt. It shouldn't reach high temperatures.)
Glaze the tops of the donuts and garnish with crumbled Fruity Lucky Charms (only the cereal part, no marshmallows).

RECIPE NOTES:
The strawberry syrup is made with 10 medium strawberries puréed with 2 teaspoons strawberry jam. It will yield more syrup than you are going to use for 1 batch but you can save it to use it as a topping on the donuts or even your yogurt or oatmeal.

⚠️ Warning: these donuts are not very sweet if eaten without the white chocolate and cereal topping. If you want to eat them plain I suggest adding 1 tablespoon maple syrup as the original recipe calls for and maybe use a bit less strawberry syrup to make up for the added liquid.
I also made heart-shaped muffins with the same batter because I didn't want to wait and wash my pan to make another small batch of donuts 😂 but you can definitely do that or make regular muffins or a mini cake!
I suggest storing these donuts in an airtight container at room temperature if you are eating them in a day or so otherwise it's probably better to place them in the fridge.
