Sticky cornflakes brownies (Vegan)
Hey guys, today I'm sharing a very special recipe: Sticky cornflakes brownies!!
Funny story: I made these treats for some friends but they ended up eating only half of them because the other half was devoured by their dog 😅😅
He got a bit sick so I was really sorry but he definitely appreciate these super fudgy brownies topped with a layer of crunchy sticky golden cornflakes 🤩🤩 I know I did too 😋

--- VEGAN BROWNIES ---
1 Tin Vegan Sweetened Condensed Milk (370g)*
110g Vegan butter
45g Brown sugar
1 teaspoon vanilla extract
24g Cocoa powder
120g All Purpose Flour
1 teaspoon baking powder
pinch of salt
--- STICKY CORN FLAKES LAYER ---
75g Corn Flakes
75g Golden Syrup**
35g Vegan butter
25g Brown Sugar
1/2 teaspoon Vanilla Extract
1/4 teaspoon Salt
Preheat oven to 350°F (180°C). Line a 20cm square pan with parchment paper.
In a medium sized saucepan, melt the butter and condensed milk together.
Once melted remove from the heat and stir in the brown sugar and vanilla extract. Set aside and let it cool a little bit.
In a large bowl add flour, cocoa powder and salt. Mix with a hand whisk to remove any lumps.
Pour the cooled mixture into the bowl and mix with a spatula until combined.
Transfer the batter into the prepared pan and bake for about 20 minutes or until the surface looks dry and a toothpick inserted into the centre of the brownies should come out with a little bit of batter still.
Let the brownies cool in the pan for about 20 minutes.
Into a small saucepan, add golden syrup, vegan butter, brown sugar and salt and set onto a medium heat.
Let all the ingredients melt together into a smooth, runny sauce. When it is runny, add vanilla extract and stir in. Set aside and let it cool a little bit.
In a large bowl add Corn Flakes, pour in the slightly cooled sugary mixture and mix until all the flakes are coated.
Transfer the sticky Corn Flakes on the brownies. Let it set in the fridge for a couple hours and then slice it into squares.
*I've found Vegan Condensed milk in Paris and I've never found anywhere else in the world so I'm not sure whether this ingredient is easy to find or not but if you are not vegan you can use regular condensed milk instead.
**I've bought Golden syrup in Paris but it's a traditional English ingredient that you might find easily online. In this recipe I think you can also substitute it with honey (not vegan) or rice syrup.
