Pot of CRUNCHY gold brownies!

Follow this recipe to learn how to make only 2 brownie cups that are perfect to celebrate St Patrick's Day: these are the pot of CRUNCHY gold brownies!
The gold inside these brownie cups is indeed crunchy since it's made of honey flavoured cereal crumbles ;)
2 tablespoons melted coconut oil (28g)*
2 tablespoons self-rising flour (16g)
2 tablespoons brown sugar (22g)
1 tablespoon granulated sugar (12g)
1 tablespoon unsweetened cocoa powder (7g)
1 large egg yolk
1 tablespoon cold coffee (15g)*
1 teaspoon vanilla extract
Honey cereal crumbles
Preheat oven to 350°F (180°C) and prepare your muffin tins.
In a small bowl whisk together the dry ingredients (flour, brown sugar, granulated sugar and cocoa powder) until combined.
Add the wet ingredients (melted coconut oil, egg yolk, coffee and vanilla) and stir with a rubber spatula to combine. Do not over-mix.
Pour the batter into the prepared muffin tins and bake for 15 minutes.
As soon as you remove them from the oven press down their center with a tiny espresso cup to create the brownie pot. Let them cool completely.
When ready to serve decorate your brownie pots with whipped cream, honey cereal crumbles and a rainbow candy.
Melted butter instead of coconut oil would work too. (Vegetable oil? Not sure but you can try.. let me know if you do that!!)
Coffee will make your brownies taste more chocolatey so I wouldn't change this ingredient but if you don't care you can definitely use water instead of cold coffee :)
Do not store your brownies in the fridge otherwise you will end up with a very dry brownie and a very soggy cereal crumble. I suggest to decorate them only when ready to serve and eat them!
