Pistachio & Cardamom Banana Bread (Vegan)

Ok. It's Fall, I surrender.
I'm ready for a weekend of lethargy and comfort food.
No, no pumpkin yet, but how about a Pistachio & Cardamom Banana Bread? 🤩
It's not a conventional banana bread but to me, a pistachio and cardamom lover, it's one of the best I've ever had!!

INGREDIENTS:
200g mashed banana (about 2)
60g oat flour*
140g whole wheat flour*
60g pistachio flour*
80g milk (any milk)
20g vegetable oil
150g sugar*
16g baking powder
1/2 teaspoon cardamom
pinch of salt
dark chocolate chips*

Pistachios
Rolled oats

DIRECTIONS:
Preheat oven to 338°F (170°C) and cover a big loaf tin with parchment paper (my tin is 28 cm x 9 cm).
In a bowl sift together the dry ingredients: whole wheat flour, oat flour, pistachio flour, baking powder, salt cardamom. Set aside.
In another bowl mash the bananas with a fork, add milk, sugar and oil and whisk.
Add the dry ingredients and mix with a rubber spatula to combine.
Stir in the chocolate chips.
Pour the batter in the prepared loaf tin and garnish the surface with chopped pistachios and rolled oats.
Bake for about 35-40 minutes (DO NOT OPEN THE OVEN for the first 30 minutes otherwise the loaf will collapse in the middle like it happened to me 😅) or until a toothpick inserted in the center of the loaf comes out clean.
Let it cool completely before removing from the pan.

RECIPE NOTES:
I used a combination of whole wheat flour and Type 1 flour.
I made pistachio flour and oat flour by myself just grinding pistachios and rolled oats in a food processor.
I used granulated sugar because I didn't want this banana bread to be too dark in color and let the pistachios to"shine" but you can definitely use brown sugar if you don't mind!
I didn't weigh the amount of dark chocolate chips.. just adjust it to your taste!
