Updated: Sep 1, 2020
I looooove surprise muffins and if you pair them with peanut butter and cocoa pebbles I'm sure that you are going to love them too.
Here you can read how I made these treats.
62g plain yogurt *
50g sugar *
25 ml vegetable oil
25 ml milk *
4g baking powder
90g all purpose flour
25g Peanut Butter & Cocoa Pebbles
6 chocolate eggs
--- GLAZE ---
25g dark chocolate
Peanut Butter & Cocoa Pebbles
Preheat oven to 350°F (180°C) and prepare your muffin tin.
Put Peanut Butter & Cocoa Pebbles in a food processor and pulse a few times until the cereal turn into powder.
In a bowl add flour, pebbles flour, baking powder and mix with a spoon; leave it aside.
In another bowl whisk together with an hand mixer egg and sugar until light and foamy.
Add oil, yogurt, milk and keep beating.
Then leave the mixer and add gradually the dry ingredients to the mixture. Fold with a rubber spatula until there won't be any flour lump.
Pour 1 tablespoon of batter in each muffin tin (we are making 6 muffins here) and then insert 1 chocolate egg in the center.
Cover with 1 tablespoon of batter (they need to be only 3/4 full).
Bake for about 20 minutes. Let it cool before glazing them.
Melt dark chocolate in the microwave or on a double boiler, add milk and stir until creamy.
Pour chocolate cream on top of the muffins and garnish with plain Peanut Butter & Cocoa Pebbles.
You can use any kind of sugar, milk and yogurt.
If you make it let me know! :)
