Panettone muffins with Coco Pops

In Italy Christmas time means two things: Panettone and Pandoro.
Either you buy them or someone will give them to you.
In my case, the company I work for sent me a huge Panettone for Christmas.
I liked it but it's a lot of sweet bread for one person so I decided to give it a new life and made some Panettone Muffins with Coco Pops!!!
They are dense and chewy inside, while crunchy outside since they are topped with Kellogg's Coco Pops. And of course, they are super delicious 😋

250g all purpose flour
75g vegetable oil
10g baking powder
80g brown sugar
Preheat oven to 350°F (180°C) and prepare your muffin tin with 12 paper cups.
In a big bowl add panettone (crumbled), all purpose flour, baking powder and sugar. Mix with a spoon or rubber spatula and leave it aside.
In another bowl whisk together egg, oil and milk and pour the mixture into the dry ingredients. Stir to combine.
Finally fold in half of the Kellogg's Coco Pops cereal and mix briefly until just combined (the mixture will be very dense).
Transfer the batter in the prepared muffin tin and cover the surface with the remaining Kellogg's Coco Pops (keep in mind that the muffins are going to expand in the oven so don't be afraid of placing a lot of cereal on top of them because it will look just fine when baked) .
Bake for about 20 minutes or until a toothpick inserted into the center of the muffins comes out clean.
Let them cool completely before serving.
You can substitute Kellogg's Coco Pops with other cereal or even put just chocolate chips like the original recipe.

You can bake also a cake instead of muffins with the same batter. Chiarapassion suggests using a pan that has a 18-20cm of diameter in this case and baking it for about 45 minutes.
