Nutella & coconut pancake cereal

Updated: Sep 1

Cereal or pancakes?

Well you don't need to choose anymore because you can have a bowl of Pancake Cereal!!

It's the new quarantine food trend so you have probably already seen this recipe everywhere on the internet but this is my version of it. (I didn't use a piping bag so my baby pancakes are all different in size but I think they are all beautiful and delicious anyway)

Honestly making even only one batch of pancake cereal is super exhausting and time consuming but definitely worth it when it's topped with Nutella and coconut and soaked in milk.

Sorry big old pancakes, I think I like your babies better than you so check out my first attempt right here.

INGREDIENTS:

  • 125g all purpose flour

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 160ml milk

  • 1/2 teaspoon vinegar

  • 30g sugar

  • 1 egg

  • 30g melted butter

  • pinch of salt

--- TOPPINGS ---

  • Nutella

  • Coconut flakes

DIRECTIONS:

  1. Melt butter in the microwave or on the stove.

  2. Prepare buttermilk mixing in a bowl milk and vinegar and letting sit about 30 minutes.

  3. Add egg and melted butter into the buttermilk bowl and mix until combined.

  4. In a bigger bowl mix flour, sugar, baking soda and baking powder.

  5. Pour the liquid mixture into the dry one and mix until combined.

  6. Grease a pan with oil or butter and turn on the heat over medium flame.

  7. Using a small teaspoon pour a small portion of batter into the pan and cook for about 1 minute or until slightly golden. Flip carefully with a rubber spatula and cook for 30 seconds more.

  8. Place one portion of pancake cereal in a bowl, top it with Nutella and coconut flakes.

  9. Add cold milk.

  10. Enjoy :)

RECIPE NOTES:

With this batter you will make about 4 portions of pancake cereal. You can store leftover pancake cereal in the fridge for a couple of day or freeze for a month. Reheat in the microwave for 30 seconds before serving.
