Mint chocolate star muffins

Happy weekend!!!

What do you guys think about the combination of mint and chocolate?

I know some people might disagree but I really love it. That's why I made these mint chocolate muffins covered with star shaped cereal (Stelline di cereali al cacao)!! 🌟

They are super fluffy and the big dark chocolate chunks in the middle make them extra delicious!!!

INGREDIENTS:

  • 70g egg whites (about 2 eggs)

  • 165g all purpose flour

  • 45g vegetable oil

  • 95g granulated sugar

  • 60g milk

  • 60g mint syrup*

  • 7g baking powder

  • pinch of salt

  • Dark chocolate chunks (or chips)

DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and prepare your muffin tin with 9 paper or silicone cups.

  2. In a bowl beat the egg whites until stiff. Set aside.

  3. In another bowl whisk together with a hand whisker the liquid ingredients: sugar, vegetable oil, mint syrup and milk.

  4. Sift in the dry ingredients: all purpose flour, baking powder and salt. Mix until combined.

  5. Stir in the chocolate chunks.

  6. Fold in the egg whites very slowly and very carefully with a spatula.

  7. Transfer this mixture into the prepared muffin cups and top with cocoa cereal stars (Stelline di cereali al cacao).

  8. Bake for about 20 minutes or until a toothpick inserted into the center of the muffins comes out clean.

  9. Let them cool completely before removing from the cups.

  10. Enjoy :)


RECIPE NOTES:

  • My mint syrup is sugar free but you can use whatever you like.

  • Store the muffins in an airtight container for a few days but they are best eaten the day of otherwise the cereal become soft and chewy.
