Mardi Gras meltaways

Happy Mardi Gras!
This recipe comes with a super fun activity for boring covid days: dividing Fruity Pebbles by colours and collect the flakes with the 3 traditional colours of Mardi Gras (purple, green, and gold).
Then you make a batch of vegan meltaways from Chocolate covered Katie (or your favorite meltaways recipe) and instead of rolling them in additional powdered sugar you garnish them with icing and green, yellow and purple Fruity Pebbles.
These cookies literally melt in your mouth and they are quite refreshing and comforting.

125g all purpose flour
30g finely chopped hazelnuts*
113g coconut oil*
30g powdered sugar
2 teaspoon lemon juice
1 teaspoon lemon zest
pinch of salt
--- TOPPINGS ---
In a large bowl whisk together all the dry ingredients: all purpose flour, chopped nuts and salt. Set aside.
In the bowl of the stand mixer cream together coconut oil (solid) and powdered sugar.
Add the lemon zest and lemon juice and keep whisking.
Finally add the remaining dry ingredients and mix until you can make a ball (use your hand if necessary, it might look a bit crumbly at the beginning).
Divide into 20 balls of the same weight (about 15g each) and place them on a baking sheet covered with parchment paper.
Place them in the fridge while preheating the oven to 325°F (160°C).
Bake for about 15 minutes (if they melt down a bit in the oven that's just fine, they will be ready when you see a golden circle around them).
As soon as they come out of the oven they will be very fragile so don't touch them for 10 minutes, let them cool on the baking sheet before moving them on another plate.
Make the icing adding a small quantity of lemon juice into a bowl of sifted powdered sugar and mix until you get a spreadable consistency.
Spread the icing on the surface of the cookies and garnish them with purple, yellow and green Fruity Pebbles flakes.
You can use any nuts you prefer/have on hand: walnuts, pecans, almonds..
You can also use butter if you are not vegan but I've got to admit that, even I'm not vegan, I really enjoy using coconut oil in some recipes because I like that slight coconut aftertaste and this is exactly the case. I think it goes very well with lemon and it make these cookies kinda refreshing.
I haven't written the amount of powdered sugar because I've never weighted it 😅 You can totally eyeball it and understand when it's good to go from the consistency.
