Lemon squares with Honey Hoops

Milan is finally in the yellow zone! 🎗

I don't mean to be too optimistic but this weekend I might even meet my friends that I haven't seen since October 😨, this is kinda exciting.

Well, let's celebrate this tiny improvement with these super yellow cereal treats: 🍋Lemon squares with Honey Hoops! 🍯

This is the cereal version of the classic Lemon bars made with shortbread crust and lemon curd filling.The combination of honey and lemon here is very well balanced and in my opinion make an incredibly delicious dessert.

INGREDIENTS:


--- HONEY HOOPS CRUST ---



--- LEMON FILLING ---

  • 66g fresh lemon juice

  • 154g granulated sugar

  • 3 eggs

  • 30g all purpose flour

  • 1 teaspoon baking powder

  • lemon zest*


--- TOPPINGS ---


DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and cover a 18x18cm square pan with parchment paper.

  2. Add Honey Hoops in a food processor and pulse a few times until they turn into cereal flour.

  3. Cut the butter into small pieces and add them to a bowl together with the cereal powder and all purpose flour. Mix with your hands until thick and dough-like.

  4. Transfer the dough into the prepared baking dish and bake for about 15-20 minutes or until it starts to brown on the edges.

  5. In the meantime make the filling: in a bowl beat together with an electric mixer all the ingredients (eggs, sugar, flour, baking powder, lemon juice and lemon zest) until the mixture becomes slightly thick.

  6. Pour the filling on top of the baked crust and bake for additional 20 minutes.

  7. Remove from the oven and let it rest for 1 hour. Refrigerate for 1 additional hour.

  8. Cover with powdered sugar and cut into 9 squares.

  9. Garnish with more Honey Hoops at the moment of serving.

RECIPE NOTES:

  • Add a lot of lemon zest to get the more lemony flavour as possible.

  • As soon it comes out of the oven it will look a lot like a frittata but trust me, don't worry about that, let it cool, cover with powdered sugar and it will surprise you.

  • Store the lemon squares in the fridge for a couple of days but add the cereal on top only when serving otherwise they will taste a bit stale.
