Homemade Cereal Berry Pop-Tarts!
Updated: Apr 13, 2021
Why don't Kellogg's Pop-Tarts contain cereal?
I thought it was weird so I made my own version, with cereal both in the dough (oat) and in the glaze (Pink Sour Patch Kids cereal crumbles).
So good. I'm so proud of this recipe so I hope someone will try it out.
(This recipe was inspired by these homemade cereal bars).

INGREDIENTS:
104g coconut oil
161g maple syrup or agave nectar
1/2 teaspoon vanilla extract
1 egg
256g all purpose flour
90g rolled or quick oats
1/2 teaspoon salt
1 teaspoon baking powder
--- FILLING ---
Raspberry or strawberry jam
--- PINK CEREAL GLAZE ---
42g confectioners' sugar
1.25 teaspoon milk
Pink Sour Patch Kids cereal crumbles*
DIRECTIONS:
Cream the coconut oil, maple syrup, vanilla and egg, with an electric mixer.
In a separate bowl, combine flour, oats, salt, and baking powder.
Add dry ingredients to your creamed ingredients, a little at a time, with an electric mixer, until it is well incorporated.
Wrap dough in plastic wrap, and place in the fridge for at least 1 hour.
Once chilled, roll out on wax paper, using flour where necessary so it doesn’t stick to your rolling pin, or the counter.
Preheat oven to 350°F (180°C).
Cut out the dough into 9 x 6 cm rectangles.
Spread raspberry jam on 6 rectangles leaving dough edge free and cover them with a plain rectangle.
Seal the edges with a fork and make small holes on the surface.
Bake for about 10 minutes until golden brown. Let it cool on the baking sheet.
Make the glaze combining sugar and milk in a small bowl until you get a dense consistency.
Pour the glaze on top of the tarts with a spoon and sprinkle with Pink Sour Patch Kids cereal crumbles.
Enjoy :)

RECIPE NOTES:
If the dough starts to fall apart put it back in the fridge to chill and it will be easier to work.
