Fruity Pebbles baked donuts (Gluten free)

The truth is that no matter how hot is outside (but also inside the house since my air conditioning broke down a few weeks ago...) I would ALWAYS turn on the oven for baking.

So here a sweet recipe that I would definitely do again this weekend if I still had a box of Fruity Pebbles in my pantry: gluten free baked donuts 🍩🍩🍩 !!!

They are easy and quick to make, sweet and a bit tangy (thanks to the fresh lemon zest) and of course super colourful and fun! 🤩

  • 2 eggs

  • 100g granulated sugar

  • 125g plain yogurt

  • 60g vegetable oil

  • 160g rice flour*

  • 60g potato starch

  • 8g baking powder

  • 20g Fruity Pebbles

  • lemon zest

  • vanilla powder*



  1. Preheat oven to 350°F (180°C). Brush with oil/butter and cover with flour a donut pan.

  2. In a bowl add rice flour, potato starch, baking powder and vanilla powder. Mix to combine and set aside.

  3. In a bowl whisk eggs and sugar with an electric beater until light and foamy.

  4. Add oil, yogurt and lemon zest and keep beating .

  5. Stir in the dry ingredients and mix briefly with the beater.

  6. Finally fold in the Fruity Pebbles and incorporate with a rubber spatula.

  7. Pour the batter into the pan with a teaspoon filling up to 3/4 otherwise the donut holes are going to close during the baking process.

  8. Bake for about 12 minutes.

  9. Let them cool in the pan for about 10 minutes then transfer to a cooling rack.

  10. Make the icing adding a small quantity of lemon juice inside a bowl of sifted powdered sugar. Mix until you get the desired consistency.

  11. Glaze the tops of the donuts and garnish with Fruity Pebbles.

  12. Enjoy :)


  • You can use 150g all purpose flour if you are not gluten free.

  • You can use 1/4 teaspoon vanilla extract instead of vanilla powder.

  • With this batter you can also bake muffins.

  • The donut pan I'm using is this one.
