Desert rose cookies

Today I'm sharing with you an Italian recipe: Rose del deserto (Desert rose cookies)! These sweet treats are mainly made of almond flour and cornflakes and they look like desert roses, minerals that can be found in the desert 🏜️

The recipe that I'm sharing is not mine, I got the inspiration from here but since it's in Italian I wrote the english translation below.
INGREDIENTS:
1 egg
90g soft butter
80g granulated sugar
65g all purpose flour
65g almond flour
8g baking powder
60g crushed Corn Flakes
--- TOPPINGS ---
confectioners' sugar

DIRECTIONS:
Preheat oven to 300°F (150°C) and cover a baking tray with parchment paper.
In a bowl cream together soft butter and sugar with the electric mixer.
Add the egg and keep whisking until creamy.
Leave the mixer and add gradually the flour and baking powder (sifted!) and mix with a rubber spatula until combined.
Finally add the almond flour and the crushed Corn Flakes until incorporated.
Divide the mixture evenly into about 20-21 balls, roll them in Corn Flakes and place them well spaced on the prepared tray.
Bake for about 10-15 minutes.
Let them cool completely before sprinkling with confectioners' sugar and serving.

You can store these cookies in an airtight container for 3-4 days, if they last that long ;)
