Coconut and cocoa balls cake
This week I'm back at my sister's! Here I can bake a lot but the only nice background that I can use for pictures is this tablecloth with hot air balloons 😂 It's not exactly my style but I think it goes pretty well with this simple Coconut and Cocoa Balls cake.
This cake is perfect for all occasions, it's moist inside and crunchy outside.
The recipe is super easy and perfect if you need to use up a few egg whites.

INGREDIENTS:
150g egg whites*
195g granulated sugar*
125g vegetable oil
185g all purpose flour
65g coconut flour
16g baking powder

DIRECTIONS:
Preheat oven to 350°F (180°C) and cover with parchment paper a springform pan with a diameter of 22cm.
In a big bowl sift and mix together all purpose flour, coconut flour, granulated sugar and baking powder powder.
Pour vegetable oil and whisk with an electric beater or just by hand.
In another bowl beat the egg whites until stiff.
Fold in the egg whites very slowly and very carefully with a spatula.
Transfer this mixture into the prepared pan and top with Cocoa Balls.
Bake for about 35-40 minutes or until the surface is gold and a toothpick inserted into the center of the cake comes out clean.
Let it cool completely before removing from the pan.

RECIPE NOTES:
I used store-bought egg whites but you can use fresh egg whites if you have. It should be about 5 egg whites.
If you have it, use superfine sugar. It will be easier to sift.
