Chocolate Rainbow Surprise Muffins!

Here I am with another surprise muffin recipe, and this time I think it's definitely surprising.
Look at those rainbow ricotta surprises!! They are so cool.
I had so much fun making these muffins and I hope you will make it too.

INGREDIENTS:
1 egg
1 tablespoon cocoa powder
50g sugar
35 ml vegetable oil
100g all purpose flour
4g baking powder
65g coconut yogurt*
--- RAINBOW SURPRISE ---
105g ricotta cheese
65g Sour Patch Kids Cereal flour (divided into 5 colours)
1/2 tablespoon sugar
--- GLAZE ---
Nutella
Sour Patch Kids Cereal crumbles

DIRECTIONS:
Divide Sour Patch Kids Cereal in 5 colours and put them in 5 different bowls.
Reduce each coloured cereal into cereal flour with a blender or a food processor and then put them back in the bowls.
Create the surprise balls adding 21g of ricotta cheese in each bowl and mix with a spoon until you get a shapeable consistency.
Form 5 balls and place them in the fridge for at least 30 minutes.
Preheat oven to 350°F (180°C) and prepare your muffin tin.
In a bowl break the egg and beat it slightly with a fork.
Add sugar, oil, yogurt and cocoa and mix with a spoon.
Fold in sifted flour and baking powder and mix quickly with a rubber spatula.
Pour 1 tablespoon of batter in each muffin tin (we are making 6 muffins) and then insert 1 coloured ricotta ball in the center (We have 5 ricotta balls so one muffin will be just a regular cocoa muffin).
Cover with 1 tablespoon of batter (they need to be only 3/4 full).
Bake for about 20 minutes. Let it cool before glazing them.
Spread Nutella on top of the muffins and garnish with Sour Patch Kids Cereal crumble.

RECIPE NOTES:
You can use any kind of yogurt you want but I think vanilla/plain/coconut yogurt will work best with cocoa powder.
