Chocolate pistachio surprise muffins

Updated: Apr 13

One last green recipe for St. Patrick's Day? I say yes.

Here my chocolate pistachio surprise muffins 💁‍♀️

These treats are almost entirely made of Kellogg's Coco Pops and the texture is more similar to a brownie than a muffin.

The green center is made of pistachio chocolates and they are garnished with chopped pistachio.

I loved them, it was the last recipe I was able to taste before the diet and it was amazing 🤩

Well, if you want to give it a try you can check out the super easy recipe below!

  • 1 egg

  • 50g Kellogg's Coco Pops

  • 50g unsalted butter

  • 33g dark chocolate

  • 16g granulated sugar

  • 10g all purpose flour

  • 1/4 teaspoon baking powder

  • pinch of salt

  • 4 pistachio chocolates

  • chopped pistachios

  1. Preheat oven to 350°F (180°C) and prepare your muffin tin with 4 paper cups.

  2. Melt butter and dark chocolate in the microwave or on the stove.

  3. Reduce Kellogg's Coco Pops into powder with a food processor.

  4. In a bowl, beat the whole eggs with the melted butter, sugar, Kellogg's Coco Pops powder, flour and baking powder.

  5. Add the melted chocolate and mix to obtain a muffin batter. Stir to combine.

  6. Transfer 1 tablespoon of this mixture into the prepared muffin cups, insert a pistachio chocolate in the center and cover with the remaining batter.

  7. Sprinkle with chopped pistachios.

  8. Bake for about 20 minutes or until a toothpick inserted into the center of the muffins comes out clean.

  9. Let them cool completely before serving.

  10. Enjoy :)

  • The consistency of the batter might look a bit weird since it's almost only made of cereal but it's gonna be fine when baking, don't worry! It will be more like a brownie than a regular muffin.

  • You can definitely use any chocolate you have on hand if you don't mind having a green center, but of course it will look less festive and cool ahah

If you make it let me know! :)
