Chocolate pistachio surprise muffins

One last green recipe for St. Patrick's Day? I say yes.
Here my chocolate pistachio surprise muffins 💁♀️
These treats are almost entirely made of Kellogg's Coco Pops and the texture is more similar to a brownie than a muffin.
The green center is made of pistachio chocolates and they are garnished with chopped pistachio.
I loved them, it was the last recipe I was able to taste before the diet and it was amazing 🤩

INGREDIENTS:
1 egg
50g unsalted butter
33g dark chocolate
16g granulated sugar
10g all purpose flour
1/4 teaspoon baking powder
pinch of salt
4 pistachio chocolates
chopped pistachios

DIRECTIONS:
Preheat oven to 350°F (180°C) and prepare your muffin tin with 4 paper cups.
Melt butter and dark chocolate in the microwave or on the stove.
Reduce Kellogg's Coco Pops into powder with a food processor.
In a bowl, beat the whole eggs with the melted butter, sugar, Kellogg's Coco Pops powder, flour and baking powder.
Add the melted chocolate and mix to obtain a muffin batter. Stir to combine.
Transfer 1 tablespoon of this mixture into the prepared muffin cups, insert a pistachio chocolate in the center and cover with the remaining batter.
Sprinkle with chopped pistachios.
Bake for about 20 minutes or until a toothpick inserted into the center of the muffins comes out clean.
Let them cool completely before serving.

RECIPE NOTES:
The consistency of the batter might look a bit weird since it's almost only made of cereal but it's gonna be fine when baking, don't worry! It will be more like a brownie than a regular muffin.
You can definitely use any chocolate you have on hand if you don't mind having a green center, but of course it will look less festive and cool ahah
