Chocolate & Peanut Butter mini muffins
Updated: Sep 1
How many smiley faces can you spot?
Definitely not nearly as many smiley faces as my friend Susanna made the day I brought these mini muffins to her quitting Party!!! :D
These sweet treats are peanut butter flavoured and covered with dark chocolate and Cheerios, if you love this combination you should definitely check out the recipe below.
175g granulated sugar
30g vegetable oil*
50g peanut butter
225g self-rising flour
--- CHEERIOS CHOCOLATE GLAZE ---
125g dark chocolate
Chocolate Peanut butter Cheerios
Preheat oven to 350°F (180°C) and line a mini muffin pan.
In a bowl add sugar, milk, oil, peanut butter and egg; mix well with a hand whisk until you get a creamy consistency.
Add self-rising flour (sifted!) into the mixture and stir well with a rubber spatula until all combined (do not mix too much).
Pour the batter into the prepared pan with a teaspoon filling up to 3/4 (You should obtain about 36 mini muffins)
Bake for about 15 minutes.
Let them cool in the pan for about 10 minutes then transfer to a cooling rack.
Melt dark chocolate in the microwave or on a double boiler.
Glaze the tops of the mini muffins and garnish either with Chocolate Peanut butter Cheerios or with melted peanut butter stripes.
You can use 40g melted butter instead of oil.
With this batter you can also bake regular muffins or donuts.
If you make it let me know! :)
