Chocolate Oatmeal Gem Cookies

Today I'm back with a colourful but still chocolatey recipe: chocolate oatmeal gem cookies!

They might look indulgent but they are actually kinda healthy: they are only made of rolled oats, banana, cocoa and honey but then of course I put a delicious peanut M&M's in the center to balance things out. They are soft and crunchy at the same time and very addictive!

INGREDIENTS:

  • 1 medium overripe banana

  • 1.5 tablespoon maple syrup*

  • 75g rolled oats

  • 1 tablespoon cocoa powder

  • 12 peanut M&M's *


DIRECTIONS:

  1. Preheat oven to 350°F (180°C) and cover a baking tray with parchment paper.

  2. In a bowl smash the banana until you get a very creamy puree.

  3. Add rolled oats, maple syrup, cocoa powder and mix with a rubber spatula until combined.

  4. Divide the mixture evenly into 12 balls and place them on the prepared tray.

  5. Insert a peanut M&M's in the center of each cookie.

  6. Bake for about 10 minutes.

  7. Let them cool completely before serving.

  8. Enjoy :)


RECIPE NOTES:

  • You can substitute honey for maple syrup.

  • I put peanut M&M's in the freezer for an hour before baking to prevent them to crack too much in the oven.

  • You can store these cookies in the fridge for 3-4 days or freeze for a month or so.
