Chocolate Oatmeal Gem Cookies
Updated: Mar 9, 2022
Today I'm back with a colourful but still chocolatey recipe: chocolate oatmeal gem cookies!
They might look indulgent but they are actually kinda healthy: they are only made of rolled oats, banana, cocoa and honey but then of course I put a delicious peanut M&M's in the center to balance things out. They are soft and crunchy at the same time and very addictive!
I got the inspiration for these cookies here.

INGREDIENTS:
1 medium overripe banana
1.5 tablespoon maple syrup*
75g rolled oats
1 tablespoon cocoa powder
12 peanut M&M's *
DIRECTIONS:
Preheat oven to 350°F (180°C) and cover a baking tray with parchment paper.
In a bowl smash the banana until you get a very creamy puree.
Add rolled oats, maple syrup, cocoa powder and mix with a rubber spatula until combined.
Divide the mixture evenly into 12 balls and place them on the prepared tray.
Insert a peanut M&M's in the center of each cookie.
Bake for about 10 minutes.
Let them cool completely before serving.
Enjoy :)

RECIPE NOTES:
You can substitute honey for maple syrup.
I put peanut M&M's in the freezer for an hour before baking to prevent them to crack too much in the oven.
You can store these cookies in the fridge for 3-4 days or freeze for a month or so.
