Chocolate and granola mini tarts

How are you guys? My week was pretty tough, I couldn't wait for this weekend to arrive 🤯
However, I have a suggestion for you (and me!) to make this weekend even more pleasant and sweet: Chocolate and granola mini tarts!
They are not the usual "crunchy" tarts but they are soft, chewy and filled with chocolate ganache and VITALIS Muesli Croccante DOUBLE CHOCOLATE .
The recipe is pretty easy but you need a crafty mould to create a gap on the surface of the tarts and be able to fill them with chocolate or whatever you want.

--- MINI TARTS ---
80g granulated sugar
83g plain yogurt
80g all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
--- FILLING ---
50g dark chocolate
50g heavy cream *
--- TOPPINGS ---
Preheat oven to 350°F (180°C) and prepare 4 small (10cm) silicone tart moulds*.
In a bowl beat together eggs and sugar with an electric whisker until they look light and fluffy.
Add yogurt and vanilla and keep beating.
Finally add flour and baking powder (sifted) and mix briefly to incorporate.
Transfer the mixture into the prepared moulds land bake for about 20 minutes until the edges start to colour and detach from the moulds.
Let them cool in the pans before removing them from the moulds.
Melt dark chocolate and heavy cream in the microwave or on a double boiler and mix until you get a creamy/pourable consistency.
Fill the center of the mini tarts with the chocolate ganache and garnish the surface with VITALIS Muesli Croccante DOUBLE CHOCOLATE.
Let the ganache set at room temperature or in the fridge before serving.
I used soy based heavy cream (sweetened) but any kind will do.
The tart moulds that I'm using have a sort of gap in the center that can be filled with the ganache.
The texture of these mini tarts is different from the usual tarts: they are not crunchy but soft and chewy.
Store them in the fridge if you are not eating them right away.
