Cereally Lemon Poppy Seed Cake

Happy New Year!

Let's start off this 2022 with a super cute and colourful dessert: a Cereally Lemon Poppy Seed Cake!!

It's a very easy and delicious cake, moist, fresh and perfect for breakfast too.

I covered the surface with Trix Trolls Cereal to make it a bit crunchy and obviously super fun!

  • 170g self raising flour

  • 1/2 teaspoon baking powder

  • 105g granulated sugar

  • 1 Tablespoon poppy seeds

  • 65ml rapeseed/canola oil

  • 130ml unsweetened plant-based milk*

  • Juice of 2 big lemons (~70ml)

  • Zest of 2 lemons (~1.5 Tablespoons)

  • 1/2 teaspoon vanilla extract

  • pinch of salt

--- TOPPING ---

  • 80-90g powdered/icing sugar

  • 1 Tablespoon lemon juice

  • Poppy Seeds

  • Trix Trolls Cereal (no marshmallows)


  1. Preheat oven to 350°F (180°C) and cover with parchment paper a springform pan with a diameter of 18cm.

  2. In a large bowl sift flour, baking powder and salt into a bowl. Add the sugar and poppy seeds and mix with a wooden spoon.

  3. In a separate bowl mix together the wet ingredients: oil, milk, lemon juice, lemon zest and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Transfer the mixture into the prepared pan and bake for about 30 minutes or until a toothpick inserted into the center of the cake comes out clean.

  6. Let it cool completely before removing from the pan.

  7. Make the icing by mixing the icing sugar and lemon together until it forms a thick icing. Spoon onto the cake once cooled with the back of a spoon.

  8. Top with poppy seeds and Trix Trolls Cereal.
