Birthday cake waffle cereal

Happy Galentine's Day!!!


If you haven't watched Parks and Recreation (why????) you probably don't know what I'm talking about but luckily I can quote Leslie Knope to make everything more clear:

This is the day I would love to celebrate with my friends but unfortunately I'm not sure it will be possible 😔

Well, in any case I have the perfect recipe for this day: Birthday cake waffle cereal!!

Why? Because


They are easy and delicious and you can use any waffle batter you want (I used this one)

INGREDIENTS:

  • 100g all-purpose flour

  • 30g cornstarch

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1 tablespoon sugar

  • 1/4 teaspoon salt

  • 240g milk

  • 80 ml vegetable oil

  • 1 large egg

  • 1 teaspoon vanilla extract

--- TOPPINGS ---

  • Rainbow cereal crumbles

  • Rainbow Sprinkles

  • Powdered sugar

  • Milk


DIRECTIONS:

  1. Whisk the dry ingredients in a medium bowl: flour, cornstarch, sugar, baking powder, baking soda and salt.

  2. In another bowl add the liquid ingredients: milk, vegetable oil, egg and vanilla. Mix well with a hand whisk.

  3. Pour the milk mixture into the flour mixture and whisk until just mixed.

  4. Set batter aside for 10 to 15 minutes or overnight in the fridge if you want to make them quickly in the morning.

  5. Grease with oil (if necessary) and heat your waffle iron.

  6. Pour a small portion of the batter onto the heated waffle iron using a small spoon or a bottle dispenser to form mini waffles.

  7. Cook for about 3-4 minutes and then, if necessary, flip them over and cook for a couple minutes more until they look crisp and golden brown.

  8. Make the birthday cake icing: in a bowl mix powdered sugar with a splash of milk. Glaze the mini waffles holes and add rainbow sprinkles.

  9. Place one portion of waffle cereal in a bowl, top it with leftover sugar icing or maple syrup and rainbow cereal crumbles.

  10. Add cold milk.

  11. Enjoy :)

RECIPE NOTES:


  • With this batter you will make about 5 portions of waffle cereal. You can store leftover waffle cereal in the fridge for a couple of day or freeze for a month. Reheat in the microwave for 30 seconds and glaze before serving for better results.
