Birthday cake cereal muffins

Today is one of my dearest friend's birthday so these cute cereal muffins are dedicated to her!
Sadly I cannot actually meet her today but I'm pretty sure she would love these treats.
They are sweet, soft and very easy to make so even if you don't have a reason to celebrate I suggest you to bake these muffins for your best friends anyway because they deserve it ;)

INGREDIENTS:
1 egg (room temperature)
62g sour cream *
55g granulated sugar
25g vegetable oil
25g milk
4g baking powder
90 all purpose flour
25g Sour Patch Kids Cereal crumbles *

15g dark chocolate
splash of milk

20g confectioners' sugar
splash of milk

DIRECTIONS:
Preheat oven to 350°F (180°C) and prepare your muffin tin with 5 paper or silicone cups.
In a bowl add all purpose flour and baking powder, mix with a hand whisk and leave it aside.
In another bowl whisk together eggs and sugar with the electric mixer until light and foamy (about 2 minutes).
Add sour cream, oil and milk and keep whisking until creamy.
Leave the mixer and add gradually the flour mixture; mix with a rubber spatula until combined.
Finally add the Sour Patch Kids Cereal crumbles and stir until incorporated (do not over-mix the batter).
Transfer the batter in the prepared muffin tin filling them up to 3/4.
Bake for about 25 minutes or until a toothpick inserted into the center of the muffins comes out clean.
Let them cool completely before glazing them.
Rainbow Chocolate Glaze: melt dark chocolate on a double boiler, add a splash of milk and mix until you get a dense but pourable consistency.
Rainbow Sugar Glaze: in a bowl whisk together powdered sugar and milk until you get a dense but creamy consistency.
Glaze the muffin tops and sprinkle with Sour Patch Kids Cereal crumbles.

RECIPE NOTES:
You can use yogurt instead of sour cream but the consistency will be different. They will be less moist.
You can use any rainbow cereal you can find!
